Baked Berry Oats

Start as you mean to go on. Breakfast is the most important meal of the day. Both of these sayings, however cliché, are completely and utterly true. And this recipe does exactly what they tell you to do.

I LOVE sweet breakfasts, but they always leave me reaching for the biscuit tin. These baked oats satisfy your sugar cravings and leave you full for longer, stopping the mid-morning muchies!

Frozen berries are great to have stocked-up as they’re low-calorie, loaded with antioxidants and high in fibre. Pair this with the protein-rich oats and healthy fats in almonds - you have a winning combination!

Serves 2


Ingredients

- 100g oats

- 6 drops of vanilla extract

- 1⁄4 tsp cinnamon

- 1⁄4 tsp baking powder

- 3 tbsp maple flavour syrup

- 20g chopped almonds

- 100g frozen berries

- 135ml almond milk (or other milk)

Method

1. Preheat the oven to 180C and grease a small rectangle tin. If you have a silicone one, even better!

2. In one bowl, combine the oats, cinnamon, chopped almonds and baking powder.

3. In a second bowl, mix the almond milk, maple syrup and vanilla drops.

4. Next, add the majority of frozen berries into the bottom of the tin and then scatter over the dry ingredients.

5. Once you’ve done this, pour the wet mixture gently and top with the remaining berries.

6. Place in the oven and bake for roughly 20 minutes or until the oats are golden brown.

7. Serve with some greek yogurt and a drizzle of honey for a tasty, filling breakfast.
