Chocolate & Banana Pancakes

Ingredients:
- 2 ripe bananas
- 2 eggs
- 1/2 cup rolled oats
- 1/2 tsp baking powder
- 2 tbsp cocoa powder
- 1 and 1/2 tbsp zero calorie chocolate syrup
- Pinch of salt
- A few sprays of cooking oil
Method:
1) Begin by mashing the bananas in a large mixing bowl using a fork. When they have a liquid-like consistency, add both eggs and the chocolate syrup before combining.
2) Next, add the oats, baking powder, cocoa powder and a pinch of salt before using a wooden spoon to mix it all together. Allow to rest for a few minutes.
3) While the mixture sits for a little while, add a few sprays of cooking oil to a frying pan on low heat. Once hot, dollop the mixture into the pan in a circle shape. Wait two minutes before flipping with a spatula.
4) When both sides are cooked - it’s time to plate up! My favourite way to serve these is with a huge scoop of Colombian Chocolate & Hazelnut ice cream and grated white and dark chocolate!
