Chocolate Energy Balls

In collaboration with Mindful Bites


This is the perfect make-ahead recipe, ready for healthy snacking or breakfasts. Even though we all have slightly more time at the moment, it doesn’t mean we want to spend it all in the kitchen, and these are a delicious afternoon pick me up.

Not only are they tasty, the flaxseeds and chia seeds are high in omega-3 fatty acids which can be difficult to get in a plant-based diet. Adding oats makes them an energy-boosting powerhouse with no nasties!

You can store these in an airtight container for up to a week in the fridge, but I don’t think they’ll last that long…


Makes 12

Ingredients:

- 115g jumbo oats

- 30g regular oats

- 25g ground flaxseeds

- 20g chia seeds

- 55g Mindful Bites Chocolate Hazelnut Spread

- 40g of agave nectar

- 1/2 teaspoon of vanilla extract

- 20g hazelnuts, finely chopped

- Pinch of salt


Method:


Begin by combining all the dry ingredients into a large mixing bowl.

Next, add the chocolate spread and agave syrup to a microwaveable bowl and heat until melted. When runny, mix into the dry ingredients before adding the vanilla extract.


Once combined, put the mixture into the fridge to cool for 20 minutes. This will make it easier to shape into balls.

When chilled, split the mix into 12 and get ready to roll. You may need to squash them together rather than actually rolling them though...


They’ll be ready to eat straight away, but you can always dunk them in some leftover chocolate spread if you feel particularly indulgent!!
