Granola and Banana Muffins

These delicious muffins are the perfect grab-and-go breakfast, and they’re packed full of protein, complex carbs and healthy fats! Is there a better way to meet your macros than with cake to start the day?

The tasty granola gives the muffins an extra crunch and the banana protein shake adds sweetness, which is why you don’t need as much sugar in these as you do normal ones.

Makes 12 muffins

Ingredients

⁃ 1 ½ cups plain flour

⁃ 1 ½ cups Fuel10K Peanut Butter Granola

⁃ 1/3 cup granulated sugar

⁃ 2 teaspoons baking powder

⁃ 1 teaspoon baking soda

⁃ 1 egg

⁃ 3/4 cup Fuel10K Banana Breakfast Drink

⁃ 1/4 cup vegetable oil

⁃ 1/2 teaspoon vanilla extract

⁃ 2 bananas, mashed with a fork

⁃ Pinch of salt

Method

1. Preheat your oven to 180C and line a muffin tin with 12 cases (it’s always best to do the boring part first and get it out of the way!).


2. Now, in a large bowl combine the dry ingredients - plain flour, granulated sugar, baking powder, baking soda, pinch of salt and 1 cup of peanut butter granola (save the leftover 1/2 cup for later).


3. Once combined, set aside and grab another mixing bowl. In this, add the breakfast drink, egg, vegetable oil, mashed banana and vanilla extract. Whisk with a fork until completely mixed together.


4. Next, pour this into the dry ingredients and stir. Most people will say to do it slowly, but for this it makes no difference. Throw it all in!


5. Spoon the mixture evenly into the 12 cases and then use the leftover 1/2 cup of granola to sprinkle over each one. This works best with the bits at the bottom of the bag (less clustered) and remember to gently push into the mixture, so they don’t fall off once cooked.


6. Place in the over for 20 minutes until golden brown on top. The best way to test if their done is by putting a metal skewer into the middle of one. if it comes out clean - it’s time to tuck in! But remember to cool for 15 minutes on a wire rack before eating.

These are best served warm with a large cup of coffee. If you’re feeling particularly hungry, top with a large scoop of high-protein ice-cream for the ultimate dessert. Yum!
